Yummy Fluffy Waffles


            These waffles are so good!  Usually one of us kids wakes up early and makes them almost every Saturday.  This is the recipe that I like.  I played around with it to make it taste even better and be even fluffier.  Almost every Saturday, we get up to the smell of cooking waffles creeping into our room.  When we were younger, we would eat pancakes or waffles, and listen to a Saturday kids radio show, or listen to a CD. Now we seem to have more going on and don't seem to do that as often as we used to, but once in a while when we do, it brings back special memories. On birthdays we make them with chocolate chips, but you might not want to do that because they are harder to get out of the waffle maker, that is why we only do it for special occasions.  Sometimes we top the waffles with ice-cream, or berries, but the traditional butter and syrup, as shone, is absolutely mouth watering .  That is good!  In the summer, when it is hot, take the waffle cooker outside, and you won't have to heat the house up!  But if it's cold, rainy morning like this week, the warmth makes them taste even better.  So, now that I have told you all about my waffles I’m assuming that you might want the recipe, so it will be at the bottom of the pictures.  Hope you try it and let me know what you think!

With a slice butter and syrup drizzled on top of a freshly made waffle, makes this ready to eat!


 


Recipe

Prep time: about 15 minutes
Cook time: about 30 minute

1 ¾ cups all purpose flour
2 tsp baking powder
½ tsp salt
5 Tbsp granulated sugar
3 eggs
1 ¾ cups whole milk
¼ cup vegetable oil
¼ cup butter (you can use the rest for buttering the waffle maker)
2 oz (½ tsp) pure vanilla extract (optional but I always use it)

1.                  Pre-heat the waffle maker, if it has settings set it to the highest or almost the highest setting.
2.                  Sift together flour, 2 Tbsp sugar, baking powder and salt. 
3.                  Separate the eggs.  Save the whites in a glass mixing bowl and yolks in another. 
4.                  Melt the butter at a low heat or in the microwave.  Remove the butter and let it cool, but do not let it solidify. 
5.                  Warm the milk till luke warm.  Then whisk in the eggs yolks, oil and melted butter. 
6.                  Using a hand mixer or stand mixer, beat the egg whites until stiff.  Then add 3 Tbsp sugar and continue mixing until you get nice stiff peaks. 
7.                  Add liquid ingredients to dry ingredients and mix gently until combined.  Be careful not to over mix the batter! 
8.                  Use a rubber spatula to gently fold the beaten egg whites into the batter, and again be careful not to over mix or you wont get as fluffy waffles as you want. 
9.                  Spray both surfaces of your waffle iron with cooking spray, grease with butter or with oil. 
10.              Ladle ½ to ¾ cup (depending on your waffle maker) of batter onto the waffle maker.  It’s not unusual for a bit of batter to seep out of the edges, but if too much comes out use less batter for the next waffle. 
11.              Cook until the waffle maker’s indicator light shows the cooking is complete, or until no more steam comes out.  The finished waffle should be golden brown and crispy. 
12.              Lift the waffle out of the iron with a pair of tons or a fork, but be careful not to scrape the waffle maker because it may cause problems with sticking and not coming out as easily as it should. 
13.              Serve right away or lay a towel or aluminum foil on top of the waffle to keep it warm.  Makes about 4-5 waffles, you can easily double or triple the recipe, depending on the size of your family or if you want some left-over.  Be careful of the salt, do not add too much!  Enjoy!!!
